By law, DOP Mozzarella di Bufala Campana, can be sold only if it is pre-packaged at the source (in heat-sealed bags, tubs, cups, etc.)  and each package must list the following information:

  • The name “Mozzarella di Bufala Campana”, immediately followed by the DOP trademark name ‘Denominazione di Origine Protetta’;
  • The logo featuring the Italian (D.P.C.M. 10/5/93) and European (EC Reg. no.1107/96) laws in addition to the production facility’s authorization number (CONSORTIUM CODE NO. 000/00/0000);
  • The wording “Guaranteed by the Ministry of Agricultural and Forestry Policies in accordance with art.10 of EC Reg. 510/2006”.

All mozzarellas for sale that are not pre-packaged lose their identity and therefore do not bear the trademark of origin.

Only sales outlets adjacent to the production facility can store the product loosely without packaging. However, the product must always be placed in a package at the time of sale.

In accordance with legal decree MIPAF 21/7/98, it is prohibited to sell non-DOP certified mozzarellas in a package bearing the names “Mozzarella di Bufala”, “Mozzarella bufalina”, etc.

A Mozzarella made with buffalo’s milk which is not DOP certified can be sold under the name : “Mozzarella + brand name + buffalo’s milk”.

If the cheese is packaged in a knotted bag, the manufacturer must place a seal of guarantee above the knot. Otherwise, the reseller may also be subject to sanctions.

In order for Mozzarella di Bufala Campana to be used as an ingredient in food preparations  – aside from those provisioned under art.23 of legislative decree n.109/1992 – the cheese must be processed in a substantial way and the finished product must be sold under a different name, which must also be used by the retailer. For this reason, the retail dealer cannot sell the product loosely or without additional pre-packaging, resorting to the use of deceptive practices, such as the addition of olive oil and/or olives. To savor mozzarella at its best, consume as soon as possible.

If not consumed immediately, store in a cool place and be sure that it is completely submerged in its preserving liquid. If stored in the refrigerator, remove ahead of time so it reaches room temperature when served – the best way to enjoy its flavor to the fullest.
